λοιπον κοπελες μου στειλε η φιλη ιταλιδα συνταγες για cupcakes και macarons,τις εχει κανει η ιδια και κατα τα λεγομενα της ειναι νοστιμοτατα.Σας τις βαζω για οποια ενδιαφερεται:
Vanilla Cupcakes
Ingredients
115 g butter room temperature (it has to be like a cream)
130 g sugar
3 eggs
210 gr flour
1 pinch of salt
2 teaspoons of baking powder
60 ml milk
1 teaspoon vanilla extract
Water Icing
200 g icing/confectioners' sugar
2-3 spoons of water
Pre-heat ovet at 180°-200°
Butter a muffin pan or use baking cups.
Put all dry ingredients in a bowl: flour, baking powder, salt.
Flavour the milk with the vanilla extract.
Mix together the butter with the sugar. Add one egg at the time. Add the flour, with the baking powder and salt.
Add the milk.
Scoop into the prepared muffin cups.
Bake 20-25 minutes in the pre-heated oven.
To prepare the water icing: sift the icing sugar. Add two spoons of tepid water and mix together. Add some water if needed. You can add some food coloring (maybe pink)!
Put the icing on the cupcakes.

Strawberry Cupcakes
Ingredients
115 g melted butter room temperature
130 g sugar
3 eggs
210 gr flour
1 pinch of salt
2 teaspoons of baking powder
3 spoons strawberry jam
20-30 ml milk only if needed
Icing:
125 icing sugar
10g melted butter room temperatured
tepid water
2 spoons strawberry jam
Pre-heat ovet at 180°-200°
Butter a muffin pan or use baking cups.
Put all dry ingredients in a bowl: flour, baking powder, salt.
Flavour the milk with the vanilla extract.
Mix together the butter with the sugar. Add one egg at the time. Add the flour, with the baking powder and salt. Add the strawberry jam. If needed add some milk (usually I do not add milk).
Scoop into the prepared muffin cups.
Bake 20-25 minutes in the pre-heated oven.
To prepare the water icing: sift the icing sugar. Add two spoons of tepid water and mix together. Add the strawberry jam. Add some water if needed.
Put the icing on the cupcakes.
Decorate with strawberries.

Chocolate chips banana cupcakes with cream cheese cinnamon frosting
Ingredients
120 g melted butter room temperature
170 g sugar
2 eggs
220 gr flour
1 pinch of salt
2 teaspoons of baking powder
2 mashed bananas
30 ml milk
a handful of chocolate chips
Cinnamon Cream Cheese Frosting
350 gr room temperature cream cheese
80 gr melted butter
160 gr icing sugar
1 teaspoon of cinnamon
Pre-heat ovet at 170°-180°
Butter a muffin pan or use baking cups.
Put all dry ingredients in a bowl: flour, baking powder, salt.
Mash the bananas with a fork.
Mix together the butter with the sugar. Add one egg at the time. Add mashed bananas. Add the flour, with the baking powder and salt. Add some milk.
Scoop into the prepared muffin cups.
Bake 20-25 minutes in the pre-heated oven.
Prepare the frosting: mix together butter and cream cheese; add the icing sugar and keep mixing until the mixture is creamy and smooth.
Decorate cupcakes with the frosting.

Chocolate cupcakes with chocolate fudge frosting
Ingredients
50 gr bitter cocoa powder
150 ml boiling hot water
115 gr melted butter
200 gr sugar
2 eggs
180 gr flour
a pinch of salt
2 teaspoons of of baking powder
Frosting
120 gr dark chocolate
150 gr mashed butter
160 icing sugar
Put the boiling hot water and the bitter cocoa powder in a bowl and mix together. Let cool.
Pre-heat ovet at 180°-200°
Butter a muffin pan or use baking cups.
Put all dry ingredients in a bowl: flour, baking powder, salt.
Mix together the butter with the sugar. Add one egg at the time. Add the flour, with the baking powder and salt. Add the cocoa and water mixture.
Scoop into the prepared muffin cups.
Bake 20-25 minutes in the pre-heated oven.
Prepare frosting: melt chocolate in a double-saucepan and let cool. Mix the butter and add slowly the icing sugar. Add the melted chocolate.
Decorate the cupcakes with the frosting.

Chocolate Macarons
Ingredients
120 gr almonds flour
90 gr egg whites (they have to be kept in the refrigerator for a couple of days)
30 gr sugar
20 gr bitter cocoa powder
red food coloring
1 pinch of salt
some drops of lemon
Pre-heat oven at 145°-155° and leave the pan you'll use for the macarons inside it.
Mix with the pulse function the almond flour, the sugar and cocoa powder.
Whip the egg whites, add the pinch of salt and some lemon drops.
Add VERY SLOWLY the sugar with a wood spoon and the food coloring.
Add half of the powder mixture in the egg whites. Mix slowly from the bottom to the top. Add the remaining powder mixture.
Put the wax paper on the pan. You have to do 2 centimeters diameter circles with the mixture.
Bake 15 minutes in the pre-heated oven.
Let them cool.
Dark Chocolate Ganache
60 gr+120gr cream
10 gr burro
Melt chocolate in a double-saucepan. Boil cream and add it to the chocolate. When the mixtures reaches 40° add the butter. Let cool and when it's completely cooled add the 120 g cream.
Macarons have to be kept in the refrigerator for a day.
